Chinese Omelette
Ingredients
- 8 large eggs

2 cups (500 mL) cooked chicken OR turkey, shredded

12 large shrimp, peeled and deveined

2 tbsp (30 mL) chopped chives

2 tsp (10 mL) light soy sauce

Hot sauce, to taste

2 tbsp (30 mL) vegetable oil
Directions

Lightly beat the eggs in a large mixing bowl.

Add the shredded chicken and large shrimp to the eggs, mixing well. Stir in the chopped chives, soy sauce and hot sauce, mixing well.

Heat the oil in a large skillet over medium heat and add the egg mixture, tilting the skillet to coat the base completely. Cook over medium heat, gently stirring the omelette with a fork, until the surface is just set and the underside is golden brown. When the omelette is set, slide it out of the skillet with the aid of a spatula. Cut the omelette into squares or slices to serve.

A reader says she has a recipe book that makes
reference to "polished rice" and wonders what that is.
It's regular old long-grain white rice.
The outer hull of grains of rice is not edible,
and is removed when the rice is harvested and processed.
Under the hull, there's a thin layer of bran. Leave
it on and you've got brown rice.
To remove the bran, there's an abrasion process, which in
effect "polishes" the grains. That's how you get white rice.
